Banana blueberry bread or Omega3, Protein and low on carbs bread

Some days just require something sweet and you know what I mean. To treat the sweet tooth right and without sugar I thought of this surprisingly easy and fast baking banana bread with blueberries. Try it out at home (no need to thank me) and use as a healthy nutritionally rich snack before or after training or whenever the sweet tooth reminds of itself - the benefits of bread are endless (Omega 3, Protein and low on sugar and carbs!), as the list of ingredients is just so good!

Banana blueberry bread. Enso London

Ingredients:

  • 3 bananas
  • 150g blueberries
  • 1 egg
  • 2 tbs honey
  • 80g milled oatmeal with chia
  • 80g gluten free flour
  • 30g milled flaxseed
  • pinch of baking soda
  • 1 cup of Skyr yogurt (17g protein!!) 
  • olive oil

Method:

Mash bananas. Beat the egg and mix together with bananas, add honey, mix well. Add yogurt here, mix it, then add all dry ingredients and mix again. Add 2/3 of blueberries into the mix. Prepare the loaf tin by brushing the olive oil inside it and fill in with the mix. 

Bake about 25-30 min at 200C. 

Let it cool down after and it is ready to have a bite! ENJOY!
