Winter lattes to warm hands and soul

The streets of London have already seen snow (and it's not Christmas yet!), it has become colder and windier. Idea of having a warm cup of tea while your commute makes you happy and smily. And indeed many coffee shops of London offer nice chai lattes to go. 

Bitter icy winds made me buy these chai lattes way too many times and I thought why not trying to make one at home??? Result: I did 3 different chais (literally, tea!) and can't wait to share them with you.


1. Chai Latte or Massala Chai latte.

Chai Latte. Enso Sport Skirts.


  • 2 tbsp loose-leaf black Ceylon tea
  • 2 cloves
  • 2-3 seeds of green cardamom 
  • Cinnamon stick
  • 3-4 seeds of black peppercorn
  • Fresh ginger (peeled)
  • 2 tbsp of maple syrup
  • 2 cups of water
  • 1 cup of milk


1. Put all the spices together in a small saucepan over medium heat and toast them for about 3 minutes.

2. Add ginger and water to the mix and simmer for about 5 minutes. Then remove from the heat and add the tea leaves. Cover for 10 minutes.

3. Add the maple syrup while tea is still warm and stir until dissolved.

4. Strain the liquid and discard the spices and tea leaves. 

5. Froth the milk by whisking it vigorously over medium heat and warm it over low hear until warm.

6. Combine 3/4 of cup of tea base together with warm milk. Add the milk froth on top.

7. Enjoy a creamy cup of spiced black tea with just the right Christmas mood!


2. Noon Latte or Kashmiri salt pink chai latte.

  • 2 tsp Kashmiri tea leaves (or according to one of sources green tea leaves!)
  • 1/2 tsp bicarb soda
  • 2-3 crushed seedless pods of cardamom seeds 
  • 2 cups of water
  • 2 cups of milk
  • 1/2 tsp of sea salt


1. Brew the tea leaves in a half of required water over medium heat. Boil it until it is frothy and add bicarb soda and vigorously whisk for 12 seconds and add the rest of water with cardamom. Boil until the brew becomes bright red.

2. Turn the heat to medium and add milk, again vigorously whisking it to achieve first signs of froth. The mix should get a nice, lovely pink shades that depend on the amount of milk you add - the more the lighter it gets!

3. Last step - add salt and stir it until combined. Enjoy the nicest warmest pink chai together with your loved ones!


3. Turmeric chai latte.


  • 1 tsp of ground turmeric
  • Fresh ginger (peeled)
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsp of maple syrup
  • 1 tsp of almond butter
  • 2 cups of coconut milk 
  • 2 cups of water
  • 2 tbsp loose tea leaf Ceylon tea


1. Mix all ingredients together except tea leaves and maple syrup and heat until boiling. 

2. Remove from the heat and add the tea leaves for 10 minutes. Then strain through the mesh.

3. Heat the coconut milk together with maple syrup and pour into a mug with 1/4 of tea brew. Sprinkle with some cinnamon magic and enjoy a cozy time of the day!
